Ingredients (serves 4)
300g SchuAm Pork loin diced
2 medium chillis
1 bunch oregano chopped
½ bunch mint chopped
2 lemon's zest
½ white onion
1 tspn fresh ginger
1 tspn fresh garlic
3 cups bread crumbs
Preheat oven to 180 degrees.
Dice onion and sauté with ginger and garlic, place in a bowl until cool.
Roughly chop herbs and chilli, zest lemon and add to mix.
Add pork and eggs and mix well.
Slowly add half the bread crumbs, until the mixture is able to be rolled into small soft balls.
Roll balls in the remaining bread crumbs.
Place pan on medium heat then add olive oil. Once heated add meat balls and cook until outside is browned, then place on a tray in the oven for 10-15 mins until inside is cooked.
Serve on a bed of fresh salad, accompaniments can be soy or sweet chilli sauce.
